We’ve all been there – we’ve been invited to a party or social gathering and asked to bring a dish along. In a  moment of utter delusion, when we fancy ourselves as the perfect hybrid of Martha Stewart and Betty Crocker, we offer to bring something homemade – then 10 seconds later, we really wish we hadn’t! Why? Because we have neither the time nor the first idea what to make! 

Don’t worry – I’m here to banish the panic. This quick fix Creamy Spinach Pie is a delicious party pleaser and can even be prepared the day before. It’s one of my family’s absolute favorites (even those who claim not to like spinach will usually ask for seconds) and is always a great addition to Christmas, Thanksgiving, and other holiday dinners.

  • It’s an easy recipe, super quick to make and reheats magnificently, so you can prepare it the day before your party.

Easy Recipe – Creamy Spinach Pie

Here’s what you’ll need:
Regular glass pie dish
Measuring spoons
Small bowl
Small butter melter pan
Medium saucepan
Fork and large spoon

Ingredients:
2 10-ounce packages frozen chopped spinach, drained
1 8-ounce package cream cheese
1 stick (1/2 c) butter, cut in half
Salt and black pepper to taste (about 1/8 teaspoon salt, about 1/4 teaspoon pepper)
Garlic powder to taste (about 1/4 teaspoon or slightly more)

Topping: 
1/2 cup plain bread crumbs

3/4 teaspoon rubbed sage

Ready for the easy part?

  1. Ready all ingredients. Microwave both packages of frozen spinach in a microwave safe casserole dish setting on high for about 15 minutes. Complete steps 2-4. Catch up on a good book or TV show for the remaining time.
  2. Melt half a stick of butter in butter pan.
  3. In the meantime, pour plain bread crumbs into a small bowl and mix in the dried sage.
  4. Pour melted butter onto the bread crumbs, using a fork to mix crumb topping.
  5. Preheat oven to 350º.
  6. When microwave dings strain the cooked spinach pressing most of the water out. 
  7. Put drained spinach into a saucepan on medium low heat add cream cheese, remaining half stick of
    butter, salt, black pepper and garlic powder stirring to combine as heat melts the butter and cream
    cheese. Pour smooth creamy spinach mixture into a 9-inch pie pan. 
  8. Spread the bread crumb topping on top of the spinach mixture to lightly cover. 
  9. Bake for 30 minutes at 350º until golden brown.

Voilà! An easy-peasy take along side dish everyone will love!
